Strawberry Vanilla Cake

🍰STRAWBERRY VANILLA RECIPE

Ingredients:

For Cake Preparation:

  1. All-purpose flour – 2 cups
  2. Butter softened (unsalted) – ½ cup
  3. Granulated Sugar – 1 ½ cups
  4. Baking Powder – 1 tsp
  5. Baking Soda – ½ tsp
  6. Salt – ½ tsp
  7. Buttermilk (or milk with 1 tablespoon vinegar) – 1 Cup
  8. Vanilla Extract or Essence – 1 tsp
  9. Eggs – 3 large
  10. Fresh Chopped Strawberries (Plus extra for garnish) – 1 cup

For Strawberry Frosting:

  1. Butter Softened (unsalted) – 1 Cup
  2. Powdered Sugar – 4 Cups
  3. Heavy Cream (or milk) – ¼ Cup
  4. Vanilla extract or Essence – 1 tsp
  5. Fresh Strawberries Pureed – ½ Cup

Direction / Instructions:

  1. Cake Preparation:
  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined.
  • Now Gently fold in the chopped strawberries.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  1. Prepare the Strawberry Frosting:
  • In a large bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, continuing to beat until well combined.
  • Add the heavy cream, pureed strawberries, and vanilla extract; mix until smooth and fluffy. Adjust the consistency with more milk if needed.
  1. Assemble the Cake:
  • Place one cake layer on a serving plate. Spread a layer of frosting on top.
  • Place the second cake layer on top and frost the top and sides of the cake.
  • Decorate the top with fresh strawberry slices.
  1. Serve:
  • Slice and enjoy your delicious strawberry vanilla cake!

  • Allow the cake to cool completely before frosting to avoid melting.
