🍰STRAWBERRY VANILLA RECIPE
Ingredients:
For Cake Preparation:
- All-purpose flour – 2 cups
- Butter softened (unsalted) – ½ cup
- Granulated Sugar – 1 ½ cups
- Baking Powder – 1 tsp
- Baking Soda – ½ tsp
- Salt – ½ tsp
- Buttermilk (or milk with 1 tablespoon vinegar) – 1 Cup
- Vanilla Extract or Essence – 1 tsp
- Eggs – 3 large
- Fresh Chopped Strawberries (Plus extra for garnish) – 1 cup
For Strawberry Frosting:
- Butter Softened (unsalted) – 1 Cup
- Powdered Sugar – 4 Cups
- Heavy Cream (or milk) – ¼ Cup
- Vanilla extract or Essence – 1 tsp
- Fresh Strawberries Pureed – ½ Cup
Direction / Instructions:
- Cake Preparation:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Mix until just combined.
- Now Gently fold in the chopped strawberries.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Prepare the Strawberry Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, continuing to beat until well combined.
- Add the heavy cream, pureed strawberries, and vanilla extract; mix until smooth and fluffy. Adjust the consistency with more milk if needed.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake.
- Decorate the top with fresh strawberry slices.
- Serve:
